Well, I didn't get the job I applied for, but I didn't not get it either. They wanted me to work all week long, but I couldn't because I work in my kids class rooms during the week as well, so they offered me a sub. position. so that works for me! very excited.

I have some good news, we got pre-qualified for a home loan! yay! We are looking, I just hope home prices stay down here in California long enough for us to afford a house! wish us luck!

My baby is turning 8 on the 17th! Oh my I can't believe how fast that went.

I am excited for my 10 yr old, she has a band concert coming up next week, and she is in a play a week after that. She is so excited and so much braver than I was at her age!

Bunko was a TON of fun! I didn't win(of course) but I loved the theme and it was fun to plan. Just think next year I can do" NEW MOON"!

At my kids school we are having a rummage sale this weekend. I bought a space and will be selling a lot of kids stuff. I am just excited to get this stuff out of my garage and maybe make a few bucks!

I went to a 2 day Memory conference this week, it was very cool. It does require me to practice doing the techniques, which I am not great at practicing anything. I am going to try and help my daughter memorize her lines for a play. I am sure it will be easy using what I have learned.

I got a letter from school that my youngest (WO), her poem has been selected to be put in the Young American Poetry Digest, Book! I am so proud! The Teacher took the kids out to lie on the grass and look at the clouds and then brought them in to write a poem about them. She sent in all the poems, and a few from the class got chosen.

I actually have a Job interview on Wednesday. It is for a job at a preschool. My girls went to this preschool and I still work there every month for a friend (It’s a co-op). I am excited, especially because I can do it while my kids are in school and have time to do stuff at their school too!

I am also excited because I am hosting Bunko this month, my theme…. Twilight! The guests can dress as a vampire, o a Twilight Fan. I am serving Raviolis (what Bella Ate in the restaurant with Edward). I am decorating with apples and I am making vampire cupcakes. I even made a slide show to play with the soundtrack. I am going all out, cause it’s fun!

Hannah, our newest addition, has really made a spot in our hearts. She is so much fun, and a sweet dog. She is so not aggressive, which puts me at ease after our last dog experience. I am so glad we took a chance and opened our hearts to such a wonderful dog.

Hello my friends….

Hey it has been too long I know, I am a bad blogger, But I did get my taxes done & mailed on April 15th! One of the best things that happened while I was not here blogging, was my daughter SS turned 10!! WOW, I became a SAHM when she was born, so I can’t believe I have been able to do it this long! When I first quit my job we prayed I could stay home for 2 years at least, now we are on year 10!! Time flies, and God blessed us so much by making it possible for me to not have to work. Here are a couple of pictures from my daughter’s 10th birthday party. We had it at a local bowling alley, she had a lot of fun!

I saw Gran Torino a while ago. It was an excellent movie. I laughed and cried. It did have allot of language in it but if you can get past that you will enjoy this movie. I am going to see Revolutionary Road on wed. I read the book first and can't wait to compare the two.

7 things about me....

1. I worked as a preschool teacher for 6 years, I loved it!

2. My Job now is being a stay at home mom to my girls, which I have been doing for 10 yrs now!

3. I was on Honor roll all through high school and never was a party girl. In fact, I went to my first party Graduation night; I do have to say it was fun!

4. I LOVE to stamp! I make lots of cards and I have way over 200 stamp sets. I have a stamp area in my room but I am busting out of it!

5. I had my first child at 18

6. I went to College for 5 years, to get a 2 year degree! I probably could have done it faster if I didn’t have a full time job & baby at home.

7. I have never been really big on reading for enjoyment, until this past year, I really like it, even better than watching TV!

A weighty Issue

I have started exercising, YUK. But I have taken a walk for at least an hour every other day. I didn't realize you cold hurt that much! I hope that I can keep it up, but I do like just some time by myself listening to my Ipod. Oh I cut out soda as well. at least at home, my treat is if i go out I can have some! (Baby steps) Why have I done this (again)? Cause I just want to be Healthy. I have been over weight most of my life and the 4 months I actually got skinny in high school I got a boy friend and a baby! On went the pounds that never came off (17 yrs ago)! I don't need to be a size zero or even a 4, just a healthy weight. I also want to set an example for my kids. Thankfully they have my hubby's metabolism. He is very thin and eats whatever he wants whenever he wants (so not fair)!

On another note, I just got done reading Revolutionary Road. Ok it isn't Twilight! It was good, but boy it was depressing, I felt like there was never any happiness in these peoples life. I really do want to see the movie, and make comparisons, I can't imagine them being able to make the characters as miserable as in the book! My next book will be The Reader which I anticipate will also be a bit depressing. Have a great weekend!

Since Nascar season is coming in a couple of weeks I am getting antsy for it to start. so here are some from a race went to a couple of years ago.

Temp My Tummy Tuesday

7 Layer Taco Dip

INGREDIENTS

1 (1 ounce) package taco seasoning mix
1 (16 ounce) can refried beans
1 (8 ounce) package cream cheese, softened
1 (16 ounce) container sour cream
1 (16 ounce) jar salsa
1 large tomato, chopped
1 green bell pepper, chopped
1 bunch chopped green onions
1 small head iceberg lettuce, shredded
1 (6 ounce) can sliced black olives, drained
2 cups shredded Cheddar cheese

DIRECTIONS
In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.
Mix the sour cream and cream cheese in a medium bowl. Spread over the refried beans.
Top the layers with salsa. Place a layer of tomato, green bell pepper, green onions and lettuce over the salsa, and top with Cheddar / Jack cheese. Garnish with black olives and diced Jalapenos as desired.

This is the song from The Chronicles of Narnia :Prince Caspian. I love this song because I LOVE this movie! It totally spoke to me. I love the message C.S. Lewis was trying to get across, that is so relevant today. What I took away from the film was, we have many battles to face in our lives but until we submit to God it is useless for us to do it on our own. If you haven't seen it check it out and the 1st one The Chronicals of Narnia Lion witch & the wardrobe.

It's Tuesday?

That was fast, being home with the kids on Monday made me forget it was Tuesday!
Lots of stuff going on at my house (good & bad), keeps me away from blogging, *Sigh*
But here I am.

Wow in a few minutes we will have a new president! No I didn't vote for the new guy, but I am very excited for America. I honestly do feel sorry for Bush. Yes I know he wasn't articulate, and made bad choices, but to have people boo you or be cheering because your leaving, yikes it has to hurt. I will be keeping our new president in my prayers.

Well I read "The Shack" I thought it was very good, not perfect but a good read. I can see why it relates to allot of people. If you have read it, leave a comment and let me know what you thought of it.

Almost had a puppy this weekend! A friend of mine needed to get rid of her dog cause her son is allergic. She was a Basset hound. the night before we were going to pick her up I called and made arrangements and said, "ok I am telling my kids tonight, so this is a for sure deal right?"
Needless to say the girls were beyond excited! Only the next morning I got a phone call. Her son hadn't broken out all day and they want to wait. so by the end of the day, she called again and told me they are keeping her. UGH! Things work out ( or don't) for a reason, and it wasn't our time for the dog, I just wish I hadn't told the kids!

Today's post is not a recipe but more of an review. The new Romano’s Macaroni Grill Restaurant Favorites are Italian dinner kits inspired by the chefs from Romano’s Macaroni Grill. These new dinner kits include everything needed to create a high-quality meal in one box. I love The Garlic & herb chicken penne the most but I also like the chicken Marsala. Wow were have I been? Sorry I haven't posted in so long! You would think my house was sparkling because I haven't been blogging! nope, it is the worst it has been in a long time!

The kids need to go to school so I can get some cleaning done!

My Christmas was lovely, we just stayed home and opened presents. My brother from LA came that night at 11pm. We left for our other brother's house on Friday morning. Then on Saturday my mom & a 3rd brother came over and we haven't been all together in 9 years! So it was nice to be all together, as soon as I get a picture I will post it.

We saw 2 movies over the holidays, The tale of Despereaux & Marley & Me.

both wonderful movies! If you see Marley & me bring allot of tissue!

New Years eve was so much fun. We went to a friends house and she had wonderful food and a few wonderful friends and we stayed up until midnight, then Poof, we all left! Cause we are way too old to stay up that late any more! It took me all day to recover!

Monday Catch Up

Well ,I have been a bit busy as I am sure most of you are this time of year. So to get started, on Saturday night we took our girls to see Christmas in the park. we have never been and we thought it would be fun. It was, But it was also crowded! here are some pictures...

The park is filled with trees decorated by different community groups. here were lots of creative trees. here is my favorite, it was done by a catholic church, The top says "Sacrificed for me" instead of Starbucks! Clever!

Also I am Done with all 4 books in the twilight series! Wow, they were very good. I do admit the 1st one is my favorite. I enjoyed them all and look forward to the rest of the movies, although I don't know how they will do it, they will need a much bigger budget for special effects for sure!

Then, I have one daughter getting over strep throat and now the other one is sick, so off to the DR. we go in about an hour to check and make sure she didn't get strep, but probably does!

Christmas day we will be home, I am hoping my brother comes from LA to visit, then heads over to our other brother's house with us for the weekend. Where we will see our mom and yet another brother & their families. ( I have 3 older brothers) We haven't all been together in years!

Well we are letting cable go, Yikes. they have raised the price so much and we don't watch it as much as we used to, so we decided to just not have it any more. I will miss The Colbert report and NASCAR! ( Ali I will be relying on you starting in Feb.) But for the most part, I was finding it more of a distraction in my life. Of course that will leave more time for my other distraction, my computer!

Temp My Tummy Tuesday

Buckeye Balls

INGREDIENTS
1 1/2 cups creamy peanut butter
1/2 cup butter, softened
1 teaspoon vanilla extract
4 cups sifted confectioners' sugar
6 ounces semi-sweet chocolate chips
2 tablespoons shortening

DIRECTIONS
Line a baking sheet with waxed paper; set aside.
In a medium bowl, mix peanut butter, butter, vanilla, and confectioners' sugar with hands to form a smooth stiff dough. Shape into balls using 2 teaspoons of dough for each ball. Place on prepared pan, and refrigerate.
Melt shortening and chocolate together in a metal bowl over a pan of lightly simmering water. Stir occasionally until smooth, and remove from heat.
Remove balls from refrigerator. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate for 30 minutes to set.

Holiday Party 2002. SS wouldn't even walk over to Santa, but Wo would as long as CT went with her, but then as soon as she sat on his lap, she changed her mind. Poor Santa Most of the kids did this!

Temp My Tummy Tuesday

I don't have a name for these but they are delicious!

Ingredients

1 bag flour tortillas

vegetable oil

Cinnamon & sugar mix

Directions

Cut all tortillas in 4ths. Heat about a half an inch of oil in your frying pan. once hot place 2-3 tortillas in the hot oil. Flip them over and keep them in until golden brown on the outsides. place them on a paper towel and quickly sprinkle with cinn./sugar mix. repeat until all tortillas are done. Then serve!

Monday Catch Up

Well I went to the awards assembly on Friday and I was surprised when SS received 4 awards! Student of the month, Star Testing achievement, Perfect attendance and Honor roll! She was so proud, and so was I!

This weekend we finally put up our tree, we went fake this year due to finances and convenience, but it still looks nice. I only have 1 box out of 5 out for my decorations, I hope I have the energy to put them out but I doubt it.

This is my 100th post! how exciting, er.. for me anyway! Thanks to all who follow and comment, I appreciate all of you! I have made some wonderful bloggy friends and the ones I know in real life I have gotten to know even better!

I barely have had time to keep up with the blog this week, doing bare minimums. Because at my kids school we have something called a Santa shop. Kids come with shopping lists and we set up a store where we take them shopping and them we wrap the presents for them to take home. They really enjoy this. But it is allot of work. This week we have just been setting it up, next week is the shop. So next week will be bare minimums too. So if you haven’t seen me comment on your blog in a while I will be back!

Today is an awards ceremony, SS my 9 yr old is getting student of the month. She doesn’t know it yet. She knows she is getting something because I got an invitation to come but she thinks it is just perfect attendance. Last night she prayed for 2 awards. I smiled because I knew that would happen.

I am over half way done with “New Moon” the second book in the twilight series. It is very interesting. Not what I expected at all. I hear the other two are even better, I can’t wait.

Temp My Tummy Tuesday

Thumbprint Cookies

2/3 cup butter
1/3 cup white sugar
2 egg yolks
1 teaspoon vanilla extract
1/2 teaspoon salt
1 1/2 cups all-purpose flour
2 egg whites, lightly beaten
3/4 cup finely chopped walnuts
1/3 cup strawberry preserves
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets, or line with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg yolks, vanilla, and salt. Gradually mix in flour.
Shape dough into 3/4 inch balls. Dip in lightly beaten egg whites, then roll in finely chopped walnuts. Place 1 inch apart on prepared cookie sheets. Press down center of each with thumb.
Bake for 15 to 17 minutes, or until golden brown. Cool on baking sheet for 5 minutes, then remove to a wire rack to cool completely. Just before serving, fill centers of cookies with strawberry preserves.

Book Review

Well I read twilight & saw the movie this weekend, (okay my weekend started on Wednesday!) It only took me 2 days to read twilight, which is good for me, I am not a huge reader. I don't usually do it for fun. This was a pleasant surprise. I really got into it. The movie was good, but I just love the details of the book, you just get so much more out of it. If you plan on seeing the movie, read the book first. If you love the book you will enjoy the movie.

I hope you all had a wonderful Thanksgiving. I did, it was relaxing and nice just to be with my family. We ate the last of our left overs last night. Now countdown to Christmas!

Temp My Tummy Tuesday

Chive & Onion Mashed Potatoes

2 lb. potatoes, peeled, quartered (about 6 cups)
1/2 cup milk
1 tub (8 oz.) PHILADELPHIA Chive & Onion Cream Cheese Spread
1/4 cup Ranch Dressing

PLACE potatoes and enough water to cover in 3-qt. saucepan. Bring to boil.
REDUCE heat to medium; cook 20 to 25 min. or until tender. Drain.
MASH potatoes, gradually stirring in milk, cream cheese spread and dressing until light and fluffy. Serve immediately.

Sometime I need more fragments!

I had pre- ordered Jeremy Camp’s new album, and expected to wait until later this week to get it. But to my surprise in the mail I got my fan pack! Yay! I am so excited! Here is what I received in the pack:
CD, DVD (a devotional of each song), 3 pictures, a sticker, a bracelet (says speak up, speak now, speak loud), and the piece De resistance (SP?) : An autographed CD jacket!!!!

Plus I got this all 2 days before it was released, It officially comes out today! So what are you waiting for go get yours! ( I have already listened to it, it is AWESOME!)

I also took my girls to go see Bolt, yesterday. It was so good! That hamster is a scene stealer. I even teared up! It really is a sweet movie that the whole family will enjoy.

I Just cannot wait for my WH to get back home, he will be home tomorrow!! 10 days is way tooooo long! BTW he totally wants to have traditional thanksgiving for his birthday, so turkey time on Thursday.

oh one more thing, we have a Sonic drive in that just opened up about 2 weeks ago in the next town over. My WH has been to one before on one of his trips, and told me to skip it. I have seen commercials and I thought it looked pretty good plus me & hubby differ on what is good in food. So i decided to try it. I pulled in and ordered onion rings , corn dog, & milk shake. How can that go wrong? Well, I have to say it was terrible, the corn dog was soggy, the onion rings just were terrible, the milk shake was ok, but nothing to be excited about or to wash the taste out of my mouth! I took 2 bites of the corn dog & 2 onion rings and then threw them away. You have to know if it's fried, it has to be pretty bad for me not to eat it! I couldn't believe people were lined up for this! oh well, I guess I will not be going there again.

Yes, that was a baby lion cub WO was petting. They were feeding it a bottle to keep it occupied while people that were lined up were petting it. I thought it was an awesome experience to be that close up to a lion cub.

In our town and a neighboring town there has been 2 murdered children, one little 2 yr old girl was suffocated by her mother, and an 18 month yr old girl was shot twice in the head & chest by her mother! I will be praying for these families as my heart breaks for the babies that have taken from this earth way too early.

I know this has been done a few times, but this is so yummy, perfect for Thanksgiving!

Pumpkin Bread

INGREDIENTS
3 cups canned pumpkin puree
1 1/2 cups vegetable oil
4 cups white sugar
6 eggs
4 3/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
1 1/2 teaspoons ground cloves

DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5 inch loaf pans.
In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed.
Variations: Add raisins, mini chocolate chips (the best), pecans, or walnuts.

Well, It has happened again, Yes someone hit my van again. This is actually the 3rd time this year I have been hit. Twice I wasn't even in the car, it was parked! Pumpkin Dip
INGREDIENTS
1 (8 ounce) package cream cheese, softened
2 cups confectioners' sugar
1 (15 ounce) can solid pack pumpkin
1 tablespoon ground cinnamon
1 tablespoon pumpkin pie spice
1 teaspoon frozen orange juice concentrate

DIRECTIONS
In a medium bowl, blend cream cheese and confectioners' sugar until smooth. Gradually mix in the pumpkin. Stir in the cinnamon, pumpkin pie spice, and orange juice until smooth and well blended. Chill until serving.

I do not like spiders they give me the heby jeby's. when I saw this one I asked my Wh if he would get rid of it for me, but he said since it is in our bush out in the front yard far from the house, he wanted to leave it there. I reluctantly said ok. Him & the kids check on it daily and have watched it grow bigger. I couldn't even take these pictures (WH did). 1. I don’t drink; it’s not a religious thing, because I do think drinking is fine as long as it is in moderation. I just hate the taste of alcohol.

2. I am messy; My WH is the neat freak, I always say he is Bert and I am Ernie!

3. I Love Peanuts. No not to eat, to watch, Charlie brown and the gang! I have every holiday special on DVD and when that month approaches we watch it a few times. I do have to say I am the only one excited about this tradition in my family. (my favorite one is Thanksgiving)

4. I love the TV show chuck! Is it because my WH is a geek like him? Maybe!

5. I love getting the mail. Why I don’t know because I usually only get bills, but I find it exciting.

6. I can’t remember names; ugh I am so horrible at that! I am a visual learner I have to write the name down before I get it in my head.

7. I have stuff going on in my life that is too painful to blog about. So if you pray, keep me in them.

Cheater Pot Pie

Ingredients
3 tablespoons butter, melted
½ Rotisserie chicken cut into bite size pieces
3-4 carrots cut small
4 Yukon Gold potatoes cut in small pieces
2 (10.75 ounce) cans condensed cream of chicken soup
1/2 cup milk
Salt and pepper to taste
1 (10 ounce) can refrigerated layered biscuits

DIRECTIONS
Preheat oven to 425 degrees F. Lightly butter a 9 inch deep dish pie pan with melted butter; reserve some of the melted butter.
Steam vegetables about 10 min until vegetables are tender. In a sauce pan fold veggies & chicken in soup; mix well. Pour in milk and mix until smooth; mixture should not be runny. Add salt and pepper to taste. Bring to a boil.
Remove from heat and spread mixture into bottom of pie pan. Separate biscuits into layers and place gently on top of mixture. Drizzle remaining butter on top of biscuit layers.
Bake in preheated oven for 15 minutes, or until golden brown. Let stand for 15 minutes before serving.

(You can add or replace veggies your family like I.E. onions, broccoli, peas etc. Also I would only line the edges with the biscuits I find they are doughy if you put too many in the middle.)

A Halloween to never forget!

Well Halloween was a busy day, first we had to wake up extra early to put make up and wigs on, then we had the Halloween Parade, then the Parties! Here are a picture of WO. She went as Shirly Temple (no wig needed),

Here is SS as Cleopatra, She loved wearing her wig!

Then we went off to my niece’s Church about an hour away, to have dinner and then they have a huge trick or treating event with TONS of candy, and a puppet show for the kids. So we go on our way home and driving down a two lane highway, when 2 cars ahead they stopped to make a right turn, we were stopping and BAM. Someone hit us from behind! Well we pull over, WO is screaming because she was frightened, I get out and hold her while WH get out to deal with the other driver. I calmed the girls down and wrote down the license plate of the other van. WH was on the phone with the police and the other guy was out with him. Apparently he didn’t speak English because WH asked him 3 times for his name and driver’s license, and no intelligible response. Then WH asks him to pull his van closer to the side of the road because we were both a little too close to the highway. Well I guess in Spanish that means you can go now because as soon as he got in the van he took off! So now we are waiting for the police and he comes and says we can fill out a report but you will have to pay your deductable and your rates will probably go up. There was minimal damage to our van and no one was hurt, Thank God. But I am annoyed that someone can just get away with no insurance and hit someone then just take off! Well we headed home and went to 3 neighbors houses before heading in for the night. I let the girls pick out 10 candies each and then put the bag out for the switch witch, who takes the bag of candy and left the Tinker bell movie for them, they were excited! I hope next Halloween is less exciting!

Happy Halloween!

Of course it has been like 90 degrees all week except for Thursday and now today it is supposed to rain for Halloween! There are 2 class parties I need to help out at and then DH is heading home early because we are skipping the door to door tonight and going about an hour away to my niece's church where they have a HUGE shin-dig. I hope it will be worth the drive.

Oh I am so excited about, pumpkin seeds! I am cooking them today! My favorite part of Halloween! (other than watching It's a great Pumpkin Charlie brown)

I do have a cute story. Someone on TV was talking and they had an accent from the south. SS said why does she have an accent? I told her because she lived in a different part of the country and they have a southern accent. Then WO said ”When I get an accident I want to be like her.” I just giggled.

I will be posting some pictures this weekend of Halloween. But here are the gifts I am giving to my children’s teachers. There is a basket with a mug filled with pumpkin spice kisses, a canister of hot cocoa (from tastefully simple, of course), little ghost figurine, and a yard sign, that says trick or treat.

Mary's Story

I have known Mary since eighth grade, we were inseparable the whole year, until she moved in 9th grade. We have kept in touch all this time, and whenever we talk we just pick up where we left off. We have had allot of adventures together (remind me to tell you our running away story!). We have always been there for each other through thick & thin. She is an amazing friend, and since it is breast cancer awareness month (I know, my procrastination is showing!), I wanted to post my friend’s story.

Mary’s story:
On January 16, 2008, I was diagnosed with breast cancer. I was a healthy 34-year-old woman who had been active most of my life. I had never had a serious medical problem before, not even a broken bone. So this news was definitely not what I expected to hear from the doctor’s mouth.
About 2 months or so prior to this day, I had decided to examine myself after a shower. I had recently had an annual physical and received a breast exam that resulted in a clean bill of health. Honestly, I don’t know if it wasn’t actually God looking out for me, since I rarely did self-examinations. In fact, I probably only checked myself once a year when it popped into my mind. While doing the exam, I located what felt like a small “lump”. I went over it several times to make sure that I wasn’t making something out of nothing. It definitely felt like something was in my breast.
To be honest, I didn’t worry at that point at all. I thought, maybe I would ask my mother what she thought. I finally did get around to asking my mother if she could feel anything on my breast and she confirmed what I felt and advised me to get it checked out. Again, I never felt worried, so I wasn’t in much of a hurry to get it checked out as I should have been.
I finally made my appointment, which turned into a referral for a mammogram, which turned into a referral for a biopsy. Finally, the day of the results, it hit me that maybe there was something wrong. But, since I typically try and think positive, I had decided in myself that I would not worry unless I had to worry.
Luckily, my mother had the foresight to come with me to the appointment. I had told her several times before that day that it was not big deal and that it really wasn’t necessary. Boy I am glad that she had been there for me. When my doctor came in she said the results were not what she had hoped and that I had breast cancer. I was totally shocked, I don’t believe it hit me for a few weeks.
After a few biopsies, and blood tests, it was discovered that I have Triple Negative Breast Cancer. It is a newly recognized form of breast cancer that responds only to chemotherapy. It is aggressive in nature, which is why early detection is so very important. In fact the tumor had grown from 1.5 cm to 3.5 cm in a matter of weeks.
Since that day, I have had the most supportive family, friends, co-workers and strangers that one could ask for while going through this experience. I have also decided that this is a journey that I do not want to look back and have horrible memories. My boyfriend had encouraged me to look at this as a year to remember not a year to forget. I believe that spreading awareness, specifically to young women is one way that I can contribute, as well as heal myself.
I am currently half way through chemotherapy and I will be having a double mastectomy following my treatment. Although, it has not been easy, that’s for sure, some days are harder than others are. I do know one thing; I am so happy that I did a self-examination. I am so happy that I didn’t wait to get my lump examined. These steps probably were the reason I was a stage 2 and not any worse.

This is a Halloween Treat,

Pumpkin Cupcakes

Cupcakes:
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ginger
1/4 teaspoon salt
1/2 cup vegetable oil
1 1/4 cups sugar
2 eggs
1 teaspoon vanilla extract
1 cup canned pumpkin

Cream Cheese Frosting:
3 cups confectioners' sugar
1 8-ounce package cream cheese
4 tablespoons butter
1 teaspoon lemon juice

1. Heat the oven to 350º and line a 12-cup muffin tin with bake cups. In a large mixing bowl, stir together the flour, baking powder, cinnamon, nutmeg, ginger, and salt. Set the mixture aside.

2. In a separate mixing bowl, stir together the oil and sugar. Whisk in the eggs and stir in the vanilla extract.

3. Pour the wet ingredients over the dry ingredients and gently stir the mixture until well combined. Explain to your child that she should stir only until she can no longer see any pockets or streaks of flour.

4. Stir the pumpkin into the batter until it is thoroughly combined. Spoon the batter into the lined muffin tins. Bake for 20 minutes or until a knife inserted in the middle of one cupcake comes out clean. Let the cupcakes sit in the tin for 10 minutes and then remove to a rack to cool thoroughly.

5. Meanwhile, make the Cream Cheese Frosting. In a medium-size mixing bowl, beat together the confectioners' sugar, cream cheese, butter, and lemon juice until smooth.

Gossip

I was going to write a post about a situation that came up at the church we are attending. We are a very small church and we meet at a larger church in town. Well a situation came up between us & the other church. I wanted to post a vent about it. But then I felt a tug saying, Wait. I don’t want this to turn out to be gossiping, especially since I know allot of people that go to this church (not that anyone from there reads my blog!). I am also frustrated with the situation, so I think I will wait until it all plays out and just post my experience, and what I learned from it. If I did it now, I would only write things that were harsh and set a bad example as a Christian. There is a fine line between gossiping and venting, and it is a struggle some times to know where to stop.

A troublemaker plants seeds of strife; gossip separates the best of friends. Proverbs 16:28

On a lighter note, I took the girls to see HSM3! It was wonderful. I love the music! I also love the wholesome goodness of the film. I saw a review of the film over the weekend and the critic actually said that it is so unbelievable that teens would act this way and there was only 1 kiss! Hello, what was he expecting! Hurray for Disney promoting good teen behavior. If you haven’t seen it yet and like musicals, go see it!

Yay we have our flute back! 7 weeks & $200 later! I hate to say this but it doesn’t look as new as I thought it would, the biggest difference it the pads on the keys. Oh well I have to look at it as an investment cause SS love to play, she was one of 2 girls in her flute class to have her notes down well enough to get sheet music sent home, she is so excited!

OK I bought tickets in advance for High school musical 3, we are going Sunday morning, ( My church meet in the evening) I cannot wait, I bought the sound track on Tuesday and it sounds like a winner!

Did anyone watch the 20/20, John Stossel's special on politics? Wow it was an eye opener. It made me mad, and wish we could do more about what goes on in Washington. It also made me realize the president doesn’t have all the power to do most of the things they claim! If you haven’t seen it they have it on ABC’s website.

Tuesday Tinkerbell's’s new movie comes out on DVD and so does Kit Kidridge: an American girl! Great I want them both. We saw Kit in the movies, it is a wonderful & heartwarming story. You know you are old when in the kids’ movie you no longer check out the lead character but drool over their dad!

Temp my Tummy Tuesday

This is a yummy bread. The glaze makes this bread wonderful!

Lemon Bread

Cream together until light & creamy:

1cup sugar

2 beaten eggs

6 Tbsp shortening

1 lemon rind

Sift together, add and blend well with above:

1 1/2 cups flour

1/2 tsp salt

1 tsp baking powder

1/2 cup milk

1/2 cup walnuts (optional)

Pour into greased & floured loaf pans. Bake at 350 degrees for 45 min. Cool bread for 5 min, turn right side up over cake rack. while hot, glaze with juice of a 1lemon & 1/2 cup sugar.

I only have an after shot, but Merrie @ Sleepless Mornings inspired me with one of her DIY projects(it was a while ago). Mine not as pretty, my hooks are the removable kind, because we rent. But this corner had nothing in it and the back packs were always just laying in the entry way after school. I also had the Flag container in the garage, it was broken. My WH fixed it for me and now I use it to put purses in, so they are ready to go by the door!

Pumpkin Time

Getting ready for the annual pumpkin patch Field trip. I hope to have lots of pictures to share, as long as 1. I remember my camera (infamous for forgetting it!) and 2. I remember batteries for the camera! Leaving things up to my memory not a good idea.

Then there is the price of the pumpkin patch, I had to pay $6.50 for my child to get a pumpkin! We went to this place about 3 years ago and came away spending $25 for 3 small pumpkins! so we never went back. They wanted to charge you for anything fun, the petting zoo & maze cost money. I understand for the kids but they make the parents pay too and the kids can't go unless the parents go in with them! I understand supporting the local pumpkin patch but there are 3 other patches that are way cheaper and just as fun. All I know is I will be enjoying these pumpkin seeds, I love them. I find it hard to share them cause it seems the day after Halloween there isn't a pumpkin to be found. So I only get one batch a year, I can hardly wait!

Temp my Tummy Tuesday

I love this recipe, I buy a rotisserie chicken from Costco and make enchiladas one night and the next night make this recipe:

Mexican chicken stew

4 tablespoons olive oil
1 medium onion, roughly chopped
4 large cloves garlic, roughly chopped
2 jalapenos, seeded and sliced
1 tablespoon dried oregano
1 teaspoon dried cumin
1 (28-ounce) can chopped tomatoes
3 cups shredded cooked chicken
Few dashes Worcestershire sauce
3 to 4 cups chicken stock
1 lime
1 cup cooked white rice
Kosher salt
Sour cream, for garnish
Fresh cilantro leaves, for garnish
Directions
Heat oil in a saucepan over medium heat. Add onion and sauté for 1 to 2 minutes. Add garlic and jalapeno and sweat until soft and translucent. Add spices and cook for 1 to 2 minutes until fragrant and aromatic. Add tomatoes, chicken, Worcestershire, and stock. Bring to a simmer and cook 20 minutes.
Cut the lime in half, squeeze juice into the pot, and then add the juiced halves as well.
Add white rice and cook 5 minutes longer to warm rice through. Season, to taste, with salt.
Ladle into bowls and garnish with sour cream and cilantro.

I have nothing on the calendar for this weekend, do you know what that means? I have to help clean out our garage!! Ok I am the person who put so much stuff in there I can no longer park my van in it. But I am going to have a garage sale you know.

I am making beef tenderloin tonight. I have never done this before, I hope it goes well. I had one at my Sister-in-laws, it was soo good. I hope I don’t disappoint, because I would like to have that more often.

OK this is a classic, and my Family's favorite meal that I make.

Chicken Parmesan

1/3 cup grated Parmesan cheese
1/4 cup seasoned dry bread crumbs
6 boneless skinless chicken breast halves (2 lb.)
2 Tbsp. butter or margarine, melted
3/4 cup spaghetti sauce
6 oz. Mozzarella Cheese, cut into 6 slices

Make It
PREHEAT oven to 400°F. Mix Parmesan cheese and bread crumbs in pie plate or shallow dish. Dip chicken in butter, then in cheese mixture, turning over to evenly coat both sides.
PLACE in 15x10x1-inch baking pan sprayed with cooking spray.
BAKE 20 minutes or until chicken is cooked through.( I cook my chicken in a pan with a little bit of oil.) Then top each breast with 2 Tbsp. of the spaghetti sauce and 1 cheese slice. Bake an additional 10 minutes or until cheese is melted.

I came across ~LL~ and she has started a new blog carnival. It is called "Making a Happy Home Monday". The idea is to take an area of your home....any area...and make it better. How? By making it prettier, or more functional. I cannot promise I will do this every week, cause I am such a clutter bug, but it does motivate me.

Well I always had my necklaces in a jewelry box and they were always getting tangled. I found these, they are made by 3M and stick on my shelf with those command strips. They can easily be moved. They have 5 knobs for hanging stuff on. I found them at target reg. price $9.99, they were on clearance for $2.14! I bought 4 of them. I can easily put my necklace's away and figure out which one I want to wear. I think I will use the other two for my daughters necklaces!

Movie Fun

You Know you love your children when you go to see a talking Chihuahua movie with them!

OK It wasn't that bad, my girls LOVED it. But I am most excited about were the Previews I saw! First for the newest movie coming out from Disney/pixar BOLT! Yes another dog movie, But I am so excited for this! If you haven't heard it is about a dog that has his own TV show and has super powers, only he actually thinks he does have the powers. So he thinks his costar has been kidnapped and he escaped the lot to try and save her. It looks Hilarious and I can't wait.

But even more Exciting was the preview for this one:

I LOVE these musicals, I thought after the 1st one the second wouldn't be as good, but I was surprised, now they are taking it to a whole new level, It looks Fabulous! You don't have to have tweens or be one to enjoy these movies!

Yes I know, I need to go see a movie that isn't PG once in a while!

This is an easy and yummy treat. I also substitute the butterscotch chips with peanut butter because I like that better but either way they are yummy!

Haystacks

Ingredients:
2 cups semisweet chocolate chips
2 cups butterscotch chips
12 ounces peanuts
5 (5 ounce) cans chow mein noodles

Melt the chips in a saucepan on low heat. Stir in the nuts and the noodles.
Then drop by teaspoonfuls onto waxed paper-lined cookie sheet. Cool and then store covered in the refrigerator.

Farewell to Entrecard....

Well I checked my e-mail on Friday night and Entracard left me a message that they deleted my acct. So I check out there reasons why... because I have music playing on my blog! I have "met"(as much as you can meet a blogger) many new friends by being a member of this and I can go back as long as I take my music off. Well putting the music on my blog is one of the reasons i started this whole thing anyway do I really want to get rid of it? no. Then how much time will it free up if i don't have to drop on so many sites a day. So I think this was a blessing in disguise, I will keep to visiting the blogs I love and keep my music as well, so it has been fun entrecard but I think your rules are a little much for me.

On another note,

My husband just left for a business trip this morning. He won't be back until Friday.
I hate when he leaves. one of the quirks i do have while he is gone is my overwhelming fear someone will break into the house and kill me in my sleep. I know slim chances we live in a cul-de-sac for goodness sakes but, I have always been nervous at night. I have to wait to go to bed until I just can't keep my eyes open or I will just lay there and think. So I will also be a zombie as well, staying up late and waking up early just never does me any good. Plus now I have to watch the race ALONE!
So WH "I miss you already, can't wait for you to come home!"

I want to see this so bad, it is a christian film, and I want to support more movies like this to be made. This is a movie about a fireman & his wife, and they have a rocky marriage. Since I haven't seen it I am putting out this preview so you can be inspired to see this. Even if you are not having marriage issues I bet you know someone that is! Pass it along. We have chicken ALOT at our house, and this is so quick , easy & yummy! Enjoy....

Easy Almond Chicken & Rice

8 boneless skinless chicken thighs ( I use breasts cause we like them better)
1/4 cup Zesty Italian Dressing
1 cup chicken broth
2 cups green beans, trimmed, halved
1 cup instant white rice, uncooked
1/4 cup Sliced Almonds

TOSS chicken with dressing in resealable plastic bag. Add chicken with dressing to large nonstick skillet on medium-high heat; cook 4 min. on each side or until browned.
STIR in broth; bring to boil. Cover. Simmer 10 min. Add beans; cook 5 min. or until chicken is cooked through.
REMOVE chicken from skillet. Add rice and almonds. Remove from heat; cover. Let stand 5 min. Serve chicken over rice mixture.

I have been tagged by a wonderful blogger friend Elizabeth from 3 channels. Check out her site she is a great mom with 3 kids and she home schools too! She has tagged me with 6 unspectacular quirks. Since I have posted not too long ago about my other 6 quirks, I am just going to change it up a bit with 3 interesting facts /3 unspectacular quirks.

1. I was an extra on Beverly Hills 90210, when I was 18 yrs. Old! My Brother who worked as an extra during that time knew I loved that show so for my birthday he got me a job on it! Just my luck I come on the day when they are shooting when the girls go to Paris! Ugh no Luke Perry, no Jason Priestly, and no Brian Austin Green (my fav.)! Still a FUN time I will always remember.

2. I had a story of mine published in a book. The book is called Small miracles 2 (It is on my Shelfari). I didn’t write it but I told the Author my story and she wrote it for the book. I almost was selected to go to New York to promote the book on some TV shows but I think I was just too far away.

3. When I was born, I had Blisters all over my body that moved when you touched them, and if I was touched by human hands my skin would split open. I was not born premature but I had to be in an incubator for 2-3 weeks cause no one could hold me. My Mom said there were teams of Dr.s coming in from around the U.S. to see me. Then it just went away. I still have 2 scars from where a blister had opened. My mom has no idea the name of what I had.

4. I hate Trying New Restaurants! This goes under the Quirkiness category. I have a select few restaurants I will eat at and I order the same thing every time. My WH always wants to go into “hole in the wall places” UHM… NO.

5. Disney, another Quirk. If I could live there I would. I love everything Disney. It drives my WH crazy, he can’t stand the place and that’s the only place I want to go! It truly is the happiest place on earth!

6. Checking E-mail! Ugh even I annoy myself with how many times a day I have to check it. It’s the first thing I do when I get home or get up in the morning. I have checked my mail 4 times while writing this!! Why? Don’t know.

My Dog Story

Well we have been contemplating getting the girls a puppy. They would love it so much! WO is in a word obsessed with dogs. Me I am not all that crazy about a puppy, I don’t want to potty train it, or have it chew everything in the house, or have to find a babysitter for it if we leave for a weekend. I would prefer a little older dog but then there is the last experience we had with a dog. One of WH friends at work need to get rid of a dog cause they were moving. So we go check her out. She was a 3 yr old Doberman mix. So we fall in love with her right away, and brought her home. She was such a sweetie, we all loved her. There is a big BUT here (no not mine) WO pestered the dog (Sammie) all the time. I mean all the time. Not in a mean way just always petting or laying on her. One day Sammie was sitting next to me on the couch and WO came over and started petting her. All of a suddenly Sammie got up and Jumped on top of WO and bit her on the face. I jumped up and hit Sammie so she would get off WO. Sammie ran away to her bed and I picked up WO and got her hair out of her face, blood coming from a bite on her face. I rushed her to the bathroom wiped the blood and saw she was going to need stitches. I called WH and he met me at the emergency room. They had to give her a shot to make her sleep so they could clean the bite and stitch it up. This is a picture of what it looked like the next morning.

Then we had to deal with what were we going to do with Sammie? No shelter would take her, and I didn’t know anyone without kids to take her. Everywhere we called said the same thing we have to put her down or keep her. I couldn’t have her stay and do this again. So we told the kids we gave her to the pound where someone else would take her home. I love Sammie and I have to say I am even tearing up right now thinking about her. That was one of the hardest things for me to do. It took me months to get over, I was crying about that decision for weeks. The kids didn’t know why I was so sad. Wo still talks about Sammie and prays she is in a good home. I honestly don’t know if I could go through that again. I don’t think I am ready yet for another dog and although puppies are tempting, I think it will still be a while before we get a dog again.

Tempt My Tummy Tuesday

Thanks to Lisa at Blessed with Grace I am going to join her Temp my Tummy Tuesday. Here is my tempting treat, it is something I love to eat and bring to share with others.

Strawberry Pretzel Salad

INGREDIENTS
1 1/2 cups crushed pretzels
4 1/2 tablespoons white sugar
3/4 cup butter, melted
1 cup white sugar
2 (8 ounce) packages cream cheese
1 (8 ounce) container frozen whipped topping, thawed
1 (6 ounce) package strawberry flavored gelatin
2 cups boiling water
1 (16 ounce) package frozen strawberries

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Mix together the pretzels, 4 1/2 tablespoons sugar and melted butter. Press into the bottom of a 9x13 inch pan. Bake for 10 minutes, or lightly toasted. Set aside to cool completely.
In a medium bowl, beat the sugar and cream cheese until smooth. Fold in whipped topping. Spread evenly over the cooled crust. Refrigerate until set, about 30 minutes.
In a medium bowl, stir together the gelatin mix and boiling water. Mix in frozen strawberries, and stir until thawed. Pour over cream cheese mixture in pan. Refrigerate until completely chilled, at least 1 hour.
